Easiest (gluten free dairy free) pancakes ever!!


I want someone else to get as excited about these as I did!!

If you have ever been on any sort of gut healing protocol, you know how hard it is trying to avoid A LOT of the common food groups. We're talking gluten, diary, fructose, sugar and even some vegetables. It can be very challenging to say the least. And when you don't actually enjoy cooking it is even harder.

In the last year I have been forced to try new things and these babies were a massive win! They are SO easy and SO tasty. They saved me. I went from having two boiled eggs for breakfast every single morning to PANCAKES!! It feels like such a treat! They are my current go-to breakfast (seriously around 5 days a week!). 

They can be made with just TWO ingredients!

Ingredients (one serve)
  • Two eggs
  • Half (or a whole) banana
  • Almond meal/ LSA/ similar (optional)
Method

Mash the banana with a fork.












Stir through the eggs.












Stir through some almond meal or similar if you like to. How much you ask? I just pour in "a bit"... 












Melt some butter in a pan and pour in your mixture. 












Cook for a few minutes and then turn over. It is quite a moist pancake so turning can be tricky but you get the hang of it.

Serve with home-made natural yoghurt. Home-made yoghurt that is fermented at least 25 hours is virtually lactose free (score!!!). It is also SUPER easy to make and much cheaper than store bought. I'll write more about that soon.

Kombucha - a year on (a not so happy ending)

I love Kombucha! You may remember I even named my scobies?! Well pets aside, it is true to say that I became somewhat addicted to the stuff. 

I drank nearly 2 litres a week for a year. Some people come home from a long day at work and want a beer. I come home from a long day at work and crave a nice cold glass of kombucha!

So when I found out that I should immediately stop drinking it, I was very upset!! Turns out kombucha isn’t good for everyone.

Kombucha is a fermented drink. I was always sold on the idea that it is a “natural probiotic”. The issue is that the scoby that kombucha tea is made with is a symbiotic colony of bacteria AND yeast. This means that while the tea may be full of loads of beneficial bacteria it may also contain strains of yeast not tolerated by people with digestive issues. This includes people with candida, SIBO and parasites.

I have had digestive issues since I was a child. For example, I remember having to go home from friend’s houses because my stomach hurt so much. And I thought all people’s tummys were twice as big in the evening than when they woke up?

I am still getting to the bottom of these issues (more on that later) and in the mean time I have been told to stay well clear of kombucha and all sugar for that matter *cries*. I admit that I never noticed a specific reaction when I drank kombucha tea. However, my digestive health certainly didn’t improve in the last year and in hindsight possibly got worse.

The bottom line… if you’re in the process of healing your insides think twice (or ask your health practitioner) before chugging down on your beautiful bubbly glass of kombucha goodness.
